Stir-Fried Pumpkin with Egg

Ingredients

200 g pumpkin (remove the seeds and spongy part and cut into bite sized pieces)
150 g chicken
1/2 cup water
1 egg
3 cloves fresh garlic
1 tablespoon oil
1 tablespoon sugar
1 tablespoon Fish Sauce
3 tablespoons Oyster Sauce

Instructions

1. Heat the oil in the pan on the medium heat and add chopped garlic, then stir fry for a few seconds till it will become lightly brown and fragrant.

2. Add chicken and fry till it’s just cooked. Season it with sugar, fish sauce and oyster sauce. You can adjust seasoning as you desire.

3. Add pumpkin slices and a bit of water and simmer it for about 3 minutes or until it starts to tender. Stir fry occasionally to avoid sticking.

4. When it will become dry, add eggs to the pan and keep stirring slowly. Turn off the heat and serve the dish with jasmine rice.

Tip

You can stir in the sweet basil leaves before turning the heat off to make this dish flavorful.
