Pad Thai, literally "Thai-Style Stir-Fried Noodles", is a popular noodle dish in Thailand. The dish is considered a good introduction to Thai food for a foreigner. It is made from flat rice noodles. Pad Thai is a good combination of classic ingredients like egg, tofu, peanuts, bean sprouts and the flavors of sweet, spicy and sour.

2. Pad See Ew (Stir-Fried Noodles with Soy Sauce) : ผัดซีอิ้ว

Pad See Ew is wide or thick rice noodles cooked with dark soy sauce, Chinese broccoli and egg with the addition of beef or chicken. Dark soy sauce gives the color for the noodles. Pad See Ew is served with ground Thai chili powder and sugar for seasoning the dish.

4. Guay Tiew Kua (Stir-fried Rice Noodles) : ก๋วยเตี๋ยวคั่ว

Guay Tiew Kua is similar to Pad Se Ew. The taste of Guay Tiew Kua is unique and the texture is different from the others. It is made of wide rice noodles stir-fried with meat, eggs, bean sprouts, pickled radish, and mixed soy sauce, served with green leaf lettuce. You can choose the meat of your choice, but commonly the vendor will add chicken (Guay Tiew Kua Gai: ก่วยเตี๊ยวคั่วไก่). You can put chili sauce to add up the spiciness to this noodle dish. As you can see in the picture we've ordered it with seafood, if you want to try it like us just tell them "Guay Tiew Kua Taleh" (th:ก๋วยเตี๊ยวคั่วทะเล).

Pad Mhee Korat is a stir-fried rice noodle dish. It is originated from Nakhon Ratchasima Province (aka Korat). It is made with rice noodles, meat, seasoned with dark soy sauce, palm sugar, fish sauce and vegetables like spring onions and bean sprouts.
